Green Tomato Hot Dog Relish

Description
A great way to use up the last of your green tomatoes in the garden
Ingredients
| 6 | c | Green Tomatoes (finely chopped) | | 2 | ea | onions (finely chopped) | | 2 | ea | green bell peppers (chopped) | | 1 | ea | red bell pepepr (chopped) | | 1⁄4 | c | pickling/canning salt | | 1 | t | whole cloves | | 1 | t | celery seed | | 1 | ea | cinnamon stick (broken in half) | | 2 | c | white vinegar | | 1 1⁄2 | c | Brown Sugar (lightly packed) | | 1 | clv | Garlic (finely chopped) | | 1 | T | dry mustard | | 1⁄2 | t | kosher salt | | 1⁄2 | t | ground ginger |
Instructions
- In a large glass or stainless steel bowl, combine the tomatoes, onions, peppers and pickling salt.
Cover and let stand in a cool place for 12 hours or overnight
- Transfer mixture to a colander placed over a sink and drain. Rinse well with cold water and drain thoroughly. Using your hands, squeeze out any excess liquid and set aside

- Tie the cloves, celery seeds and cinnamon stick in a square of cheesecloth, creating a spice bag
.
- In a large stainless steel saucepan, combine the vinegar, brown sugar, garlic, mustard, salt, ginger and the spice bag. Bring to a boil over medium-high heat, stirring to dissolve the sugar.
- Add drained tomato mixture, stir well and return to a boil.
- Reduce heat, boil gently, stirring frequently, until tomatoes are transparent, about one hour.
- Discard spice bag.
- Ladle hot relish into jars, leaving ½ inch headspace. Remove any air bubbles and adjust headspace, if necessary. Wipe rim, center lid on jar, screw band down until resistance is met.
- Place jars in canner, making sure jars are completely covered. Process for 10 minutes, remove canner lid, and wait 5 additional minutes before removing jars, cooling and storing.
Notes
While this is a "Hot Dog Relish", I personally do NOT like hot dogs one damn bit and I use this instead on burgers, kielbasa, Italian cold cut subs, or just "as is"!
