Larousse GastronomiqueProsper Montaingne's is not a cookbook, it is a hugely valuable and interesting encyclopedia of French cuisine in print for about a century. The image shown is of the 1961 edition that was my mother's and now resides on my shelf - there are more recent versions. I saw on amazon that some knucklehead was disappointed that the 1961 version does not discuss Scandinavian or Japanese cuisine. With all due respect to that reviewer, IMO Larousse Gastronomique 1961 is not the place to look for such information. OTOH The maps of the individual regions of France overlain with the foodstuffs for which each city is renowned - that's a masterwork. Not that I have anything against Norwegian cuisine (or whatever they call it in Norse) and in fact I do enjoy a well-prepared lutefisk feast, but Larousse is not where I would look for it. If a Norwegian Montaigne were to produce such a volume describing the best regions for Lutefisk, gravlax, cloudberries, and herring - I'll put it on my shelf. The same is true for any other cuisine. But Montaigne started it with Larousse Gastronomique, and that worthy volume has a place of honor on my shelf! Tip of the hat to vlizzle for the suggestion!
