Description

Czech Roast Pork LoinI had a great deal on pork loin, so naturally I bought more than I needed. 

I'm glad I did! I found a handful of great pork recipes from The Blue Danube Cookbook and this is the first of them, a simple roast pork loin accented with caraway seed and marjoram.  

Ingredients

3lbPork Loin
1cWater
1tMarjoram (dried)
1TCaraway Seeds
1Tkosher salt

Instructions

  1. Preheat oven to a very slow 250 degrees.
  2. Set the meat on a board and score the fat with a sharp knife into diamonds. Then rub it with kosher salt and then sprinkle it with marjoram and caraway seeds.
  3. Roast in the slow oven for three hours.
  4. Remove from the oven when tender and let cool before carving.

Notes

This is traditionally served with a roux-thickened gravy and knedlicky bread dumplings, but it's mighty fine on its own, with the marjoram and caraway flavoring the tender pork.
