There are many varieties of dried beans used in traditional New England cooking, and many cooks have strong feelings about their favorites.

Soldier Beans are popular for baked beans, especially Maple Baked Beans. They are larger than Navy Beans and the common White Beans, cream-colored with a kidney-colored marking that some say looks like a soldier with his arms up.

I am not expert in matters of military art, but I can say the Soldier Beans served honorably and well in those Maple Baked Beans!
