We found the wonderful Summer Snow at the Wine and Cheese Depot in Ludlow. Proprietor Leslie Stuart looked at it with an experienced eye and suggested holding it for a week before opening it. We did, and it became the centerpiece of this excellent light summer supper with Granny Smith apple, blackberries, and some Lisiecka Polish sausage, and a nice pinot noir.
