Description

Pasta with CapersHere's a simple and fast pasta dish with capers that can go with pretty much anything. It can easily be vegetarian if you omit the anchovy, and even vegan, depending on the pasta that you use.  

This is traditionally made with spaghetti, but I like to use short pasta like shells or the lumaconi shown here so the capers don't all sink to the bottom of the dish. 

Ingredients

8ozShort Pasta
4TOlive oil
1eaAnchovy (rinsed, optional)
2clvGarlic (crushed)
1⁄4cCapers

Instructions

  1. Cook the pasta.
  2. Heat the oil in a skillet over moderate heat. Add the rinsed anchovy and cook it, mashing it into the oil until it goes to pieces.
  3. Add the crushed garlic and cook until it starts to brown, then remove it.
  4. Add the capers and stir them around. Reduce the heat until the pasta is ready.
  5. When the pasta is ready, drain it and add it to the oil-caper mixture. Toss well and serve hot.
