Description

Penne with a Black Olive Cream SauceThis was a surprise! I don't usually think of olives and cream together, but this was delicious, and really easy. 

For the olives, get good tender Kalamata or Gaeta olives in a jar or from the deli counter, not those woody little horrors that come in a can.

This is usually made with penne, but any short pasta will do. 

Ingredients

1lbShort Pasta
3⁄4cHeavy Cream
1 1⁄4cPitted Black Olives (chopped)
1⁄3cParmesan Cheese (freshly grated)

Instructions

  1. Boil the pasta according to the package instructions.
  2. In a saucepan, heat the cream and the olives until quite hot.
  3. When the pasta is done, mix it in a large bowl with the cream and olives and the Parmesan.
  4. Serve immediately.
