Sedano alla MolisanaSedano alla Molisana is a simple and delicious preparation of a vegetable that is sadly underappreciated in American kitchens: the humble celery. The trick that turns it from watery crunchy diet "food" into something worth serving to company is easy: you boil it first for 10 minutes! That means it's a great side dish if you are cooking pasta for supper because you already have a pot of boiling water, just be sure to cook the celery first!

After that, it's just a matter of good, common ingredients. You don't even need much patience for this one! 

Ingredients

1bnCelery (trimmed and sliced)
2TOlive oil
8eaScallions (thinly sliced)
1cBlack Olives
3TBread Crumbs

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cook the celery in boiling water for 10 minutes, then fish it out of the water with a strainer if you want the water for pasta.
  3. In a hot skillet, add the oil and a tablespoon of water, and the scallions. Cook for 5 minutes, and season as needed with salt and pepper.
  4. Add the olives and the celery and stir it all together.
  5. Transfer into an oven-safe serving dish, sprinkle with breadcrumbs, and bake for 15 minutes. Serve hot.

Notes

I liked this a lot, but I think next time I would use half the breadcrumbs.
