Tomato Salad

I learned this simple late-summer delight from my father. It responds well to different varieties of heirloom tomatoes. 

 

Ingredients

1⁄2cExtra-Virgin Olive Oil
1⁄2tSea Salt
1⁄4eaVidalia Onion
6eaTomato
1tOregano, Fresh

Instructions

  1. Slice the onion very thinly and mix with the oil and sea salt.
  2. Slice the tomatoes into strips. Discard the seeds and juice.
  3. Toss the tomato strips with the olive oil mixture.
  4. Garnish with fresh oregano and a few leaves of basil if you have it.
