3ozCarrot
1 1⁄2ozOnion
1 1⁄2qCold Water
1ozLeeks (minced)
1eaBouquet Garnis

Instructions

Combine all ingredients and simmer until the fowl carcass comes clean easily.Cool in the cooking liquor, then warm and strain into a sterile jar.
