Ingredients
| 1 | ea | Pineapple (peeled) | | 1 | ea | Red Onion | | 3 | ea | Jalapeno Chile Pepper | | 1 | ea | Lime (juice of) |
Instructions
- Slice the pineapple into 1/2-inch slices and put on hot grill for roughly 5 minutes on each side until grill marks are present.
- Slice the onion into 1/2-inch thick slices and put it and the jalapenos on the grill for 3 to 4 minutes on each side.
- Peel the skin off of the peppers.
- Dice the pineapple and onion. Mince the jalapenos.
- Toss them all in a bowl. Add lime juice and drizzle with e.v.o.o. Season with salt and freshly ground black pepper.
