Banana Bread

Lorna's been revisiting the flavors of her childhood, and one of them was the humble banana. She only likes them practically green, so she'd buy a bunch and then it was not very many days before I'd inherit three or four perfectly ripe bananas. Naturally this was my first idea, but there are many, many recipes for Banana Bread online.

I tried a few recipes, each with their own strengths, and this was my favorite. It's from James Beard's workhorse Beard on Bread.

Ingredients

2cFlour
1tBaking Soda
1⁄2tSalt
1⁄2cButter (Unsalted)
1cGranulated Sugar
2eaEggs
1cBanana (very ripe, mashed)
1⁄3cMilk
1tLemon Juice
1⁄2cchopped walnuts

Instructions

  1. Preheat the oven to 350.
  2. Combine the flour with the soda and the salt in one bowl.
  3. In another bowl, combine the butter and sugar, then add the eggs, then the bananas.
  4. When it's well mixed, add the milk and the lemon juice.
  5. Stir in the dry ingredients until just combined.
  6. Stir in the chopped nuts.
  7. (optional) Sprinkle some Demerara sugar on top, and some more chopped nuts or toasted walnut halves.
  8. Pour into a well-greased loaf pan and bake for about 75 minutes, testing frequently after an hour.
  9. Cool thoroughly before slicing.

Notes

I sprinkle the top with Demerara Sugar and a few more chopped walnuts or walnut halves just before it goes into the oven, if I have them. You can do this as muffins, too. They need 30-45 minutes depending on their size.
