Debbie's Mango Pie

This splash of tropical sunshine was a huge hit at one of our Actifio Pot-lucks, and it was photographed for this article in Inc. Magazine's December-January 2014-15 issue!

Now Debbie's a star and her Mango Pie is a command performance every time we have another pot-luck lunch at work.

This is easy no-bake recipe is great whenever you can get fresh mango pulp.

Ingredients

30ozMango pulp
6ozCream cheese (Philadelphia brand, softened)
1⁄2TSugar (to taste, if needed)
2pkUnflavored Gelatin (14g)
1eaPie Shell (baked and cooled)
2TCold Water

Instructions

  1. Sprinkle gelatin over cold water and stir until blended. Then warm the gelatin mixture until the gelatin dissolves. Do not boil.
  2. Blend mango pulp and cream cheese, add sugar if needed.
  3. Combine the mango mixture with the gelatin and blend it well.
  4. Pour the filling into the pie crust and refrigerate for at least 6 hours.
