Mom's Pumpkin-Mincemeat BreatThe rich sweetness of mincemeat combines so well with the sweet backbone of the pumpkin in this recipe that I am surprised no to see the combination more often. It is definitely a sweet festive thing that belongs in the holiday season, but it is so good that everyone who tries it wants more. 

It's a big recipe. You can halve it with no problems. But it's so popular that you'll wish you had made the whole recipe! 

Ingredients

3 1⁄2cFlour
2tground ginger
2tCinnamon
1tNutmeg
1tCloves
1 1⁄2cBrown Sugar
1 1⁄2cSugar
2tBaking Soda
1 1⁄2tSalt
4eaEggs (lightly beaten)
1csalad oil
2⁄3cWater
2cpumpkin puree
1cchopped walnuts
2eadry mincemeat (9-oz boxes)

Instructions

  1. Preheat oven to 350.
  2. Grease and flour 3 loaf pans or 4 coffee cans.
  3. Combine the dry ingredients. Combine the wet ingredients.
  4. Lightly mix the wet into the dry mixture.
  5. Pour into pans and bake for about an hour, or until done.
