Most of the work is preparing a basic fresh tomato sauce, so you could save time by using sauce from a jar if you are in a hurry, or just doctor a jarred sauce with some white wine and fresh parsley. I prefer the texture of the diced tomatoes to a smooth sauce; maybe you can find a sauce like that.

Ingredients

1⁄4cOlive oil
1eaOnion (chopped)
1eaCelery rib (chopped)
1eaGarlic (crushed)
2eaParsley sprig (chopped)
14ozdiced tomatoes (1 can)
1⁄2ozDry White Wine

Instructions

  1. Preheat oven to 400.
  2. In a saucepan, heat the oil, then cook the garlic, onion, and celery until they are soft.
  3. Add the parsley, tomatoes, and wine and cook over moderate-high heat to reduce the liquid.
  4. Oil the bottom of an oven-safe serving dish and put the fish in, whole or cut as you prefer. Add salt and pepper if you like. Surround it with the sauce and cover with a lid or with foil.
  5. Bake for 25 minutes or until the fish is done.
  6. Serve hot.
