Description

Haddock with LeeksThis was yummy and simple, just pan-fried fish served with tender cooked thinly-sliced leeks. The mild flavors complemented each other nicely. 

In the photo here, the leeks are closer to you, and the red onion beyond is Cipollata Calabrese, which made a nice contrast both visually and in flavor, while staying in harmony. 

Ingredients

2TButter
2eaLeeks (thinly sliced)
4TOlive oil
1⁄2cFlour
16ozHaddock (or Cod)

Instructions

  1. Cook the leeks in the butter over moderate heat for 5 minutes, then reduce the heat and cook gently for another 15 minutes.
  2. In another skillet, heat the oil to hot.
  3. Dredge the fish in the flour, then fry it in the oil, turning as needed, until finished, about 10 minutes depending on thickness.
  4. Serve hot on, under, or with the leeks.

Notes

The original recipe calls for breading the fish with egg and breadcrumbs, but I find the flour-only version more delicate and better suited to the mild leeks.
