Description

Halibut with Bulb Fennel

The Italian recipe that I have for this calls for porgy, but I can't get porgy so I used halibut and it came out great.

Fresh fennel is a great flavor to go with white fish. That's good, because there aren't many other flavors here to work with so the match has to be a great one! 

This is another of those recipes that goes great with pasta because you need a pot of boiling water anyway. 

Ingredients

2eaFennel bulbs (trimmed and cut in half)
1eaSprig fresh thyme
1lbHalibut (cut as needed)
1clvGarlic
1eaLemon, juice of

Instructions

  1. Bring a pot of salted water to a boil.
  2. Preheat the oven to 350.
  3. Boil the halved fennel bulbs for 10 minutes.
  4. In an ovenproof dish, put a little oil and crush the thyme over it. Set the fish on top of the thyme. Crush the garlic and add it to the pan. Add salt and pepper if you like.
  5. Arrange the boiled fennel around the fish and drizzle all with a little olive oil.
  6. Bake about 30 minutes, then squeeze the lemon over everything and serve hot.

Notes

This is indeed delicious with cod as well!
