Description

Sole with PeppersThis is an easy dish with fine simple flavors, especially if you use farm-fresh peppers and tomatoes in the summertime. 

It would be easy to jazz this up with some basil or marjoram, or some olives or chili peppers... but the simple flavor of the peppers is wonderful with the sole and it really should be allowed to come though in its own simple glory. 

Ingredients

3eaRed Bell Pepper (Seeded and diced)
14ozTomatoes (Peeled, seeded, and diced)
1clvGarlic (crushed)
1eaOnion (diced)
6eaFillets of Sole
3TOlive oil

Instructions

  1. In an oven-safe serving dish, heat the oil and cook the onion for a few minutes, then add the diced peppers and cook until both are soft.
  2. Add the tomatoes and stir everything well together.
  3. When it returns to a simmer, gently lay the sole fillets atop the vegetables, add salt as needed, cover and cook for another 10-12 minutes depending on the thickness of the fish.
  4. Serve hot straight from the cooking dish.
