Halibut all'ArancioThis is very simple and delicious! I've made it three times since learning of it maybe 5 weeks ago.

Halibut is a dense, meaty fish with a delicate flavor that responds well to light sauces.

It only takes a little while to cook this up and it requires just a few common ingredients, so it doesn't require much planning or preparation to have a nice dinner after work.

You can do this with sole as well.  

Ingredients

2TOlive oil
1lbHalibut (skin removed)
1eaOrange (zest and juice)
1TSimple Syrup

Instructions

  1. Cook the halibut in the hot oil for about 8 minutes, searing both sides.
  2. Add half of the orange juice and cook about 7 minutes more, until cooked through.
  3. In another pan, heat the simple syrup, the remaining orange juice, and the orange zest.
  4. Transfer the fish to a serving platter and dress with the sauce. Serve Hot.
