Lemon and capers are common in Italian swordfish recipes because the strong flavors go well together and stand up to the strong flavor of the fish. Many other recipes include tomatoes, which also go well but which require a little more cooking time. 

Ingredients

16ozSwordfish steaks
1clvGarlic (crushed)
1⁄4cCapers (rinsed)
1⁄2eaLemon, juice of
2TOlive oil
1ozParsley sprig
1pnFresh Oregano

Instructions

  1. In a skillet big enough for the fish, heat the oil. When it's hot, add the fish, the crushed garlic and the capers.
  2. Cook the fish about 5 minutes on each side, more or less depending on its thickness and how well-done you like it. If the garlic gets too brown, remove and discard it.
  3. When the fish is cooked on both sides, sprinkle it with the lemon juice and let it cook a couple of minutes more.
  4. Remove the fish to a serving platter. Scrape up the capers and boiled-down lemon juice and put it on or around the fish, and sprinkle the oregano and parsley on top. Serve immediately.
